I am no where near the best defender, and I don't claim to be. There are other, better methods out there, and better stacking methods I don't understand. This is just an attempt at helping people who don't know how to defend, or are just beginning to learn and want to get better.
A few important notes:
1) I always drop wrong food south of the trap when trying to lure a runner north, not sure if it's the best thing, but it works.
2) The first call is almost never crackers, so when you want to drop wrong food on the first call, drop crackers.
3) Get an extra log on higher waves in case of stupid runners, and don't forget to pick up the hammer (I forget all the time).
4) Be fast and precise, but don't spam click, that just overloads your dude while he's running, and we all know our RuneScape characters get confused easily.
5) When you stack up runners, always have your trap at (2), have as much food as runners stacked placed under you, and move one square south until they either all die, or scatter.

A question I had when I was first starting out was what wrong food and right food are, and if they change with the call or stay the same. So I will go over that.
Right food is what the call is, and wrong food is either of the two baits that isn't the call. (If the call is tofu, tofu is the right food, worms and crackers are wrong food)
If the call is tofu, and you drop tofu to lure the runners, then the call changes to worms, the tofu you dropped earlier is still right food. It matters when you drop it, but then when the food is on the ground, whether it is right or wrong food will not change with the calls.

My trail, customized a bit different over the waves:
Stock up at the defender machine, run northeast, dropping one or two crackers (wrong food) on the way, until you get one square north of the trap.
Drop 3 right food underneath you, then run northwest. As you pass the cannon, drop another right food. Be careful doing this, make sure that food is somewhere to the west of the center of the cannon. If it is straight north or northeast of the cannon, it will not be the same.
Then run north-northwest more, and on the screen you will see the runner spawn point, and a few squares south you will see a stalagmite (that's the name of the spikes sticking out of the ground). Go 1 or 2 squares northwest of that stalagmite, and drop the rest of the first call food you have.
Run to the logs, grab however many you need to complete the wave and an extra log just in case, then grab the hammer, then run back to the trap.
When you see that the trap is at (0), or after two runners die, stand one square north of the trap again. Repair the trap, drop as many right food as runners you are waiting to stack, then wait for them to come.
When you are ready to kill them, move one square south and wait until they all die, or scatter. If they scatter, drop food under you, repair the trap, try again.
I didn't go over how to recover if a runner gets past you. I just use judgment, which comes from practice. Remember that wrong food will lure the runner north. Be patient, ask for help from the collector. Good luck.

Repair, wait for the runners, move one sq south.
Remember that on wave 10, you can let runners through if you have to. Wave 10 is still simple if you mess up, because it's more relaxed.
